02 - Heat olive oil in a medium skillet over medium heat until shimmering. Add finely chopped onion and sauté for 5–7 minutes until translucent and starting to caramelize.
03 - Stir in minced garlic and cook for 1–2 minutes more, taking care not to burn the garlic. Remove from heat and let cool slightly.
04 - In a large mixing bowl, beat together cream cheese and sour cream until smooth.
05 - Add grated smoked Gouda, Worcestershire sauce, Dijon mustard, black pepper, and salt. Mix until thoroughly combined.
06 - Fold in sautéed onions and garlic, plus 2 tablespoons of chopped chives, mixing well.
07 - Transfer mixture to an oven-safe baking dish and spread evenly.
08 - Bake for 20–25 minutes until hot, bubbling, and golden on top.
09 - Remove from oven and allow to cool for 10 minutes. Garnish with additional chives if desired.
10 - Serve warm with tortilla chips or fresh-cut vegetables.

# Expert Suggestions:

01 -
  • The way smoked Gouda melts into tangy sour cream creates this incredible creamy texture that coats every chip perfectly
  • It comes together in just 15 minutes of active prep but tastes like you spent hours in the kitchen
02 -
  • Don't skip the resting period or the dip will be too runny and the flavors won't have time to meld properly
  • Grate your own cheese because pre shredded stuff has anti caking agents that prevent smooth melting
03 -
  • Use the largest holes on your box grater for the Gouda so it melts evenly and quickly
  • If making this for a crowd set out two smaller dishes instead of one giant one so guests can reach from all sides
